About this deal

Mont Sainte-Victoire is the brewery’s most faithful representation of a saison, so we’d highly recommend exploring all of the variants within this family.

This recipe tiptoes the line between what is acceptable as a stout and an entirely new combination of flavors. The tangy kveik esters bouncing off of all the chocolate and a pretty robust hopping rate make for a very angular and unique stout. When commercial larger scale brewing emerged in the Late Middle Ages, professional brewing and farmhouse took different paths. Gradually this led to different kinds of yeast evolution that gave us two separate branches of beer yeast: modern brewer’s yeast and traditional farmhouse yeast. Big beers with aging potential are lovely. For that, you need a robust yeast that can ferment high alcohol wort without off-flavors. Flavors that add long-term complexity are a plus. I have had good results with Sigmund’s kveik.

What’s a Saison?

In this recipe I have also added plain white sugar. Typically Belgian beers use a dark caramelised syrup which is referred to as Candi sugar. Home brew shops sell a hard candi sugar which is quite expensive and in my experience yields the same results as ordinary table sugar. If you want to try something different maybe use something like demerara or brown sugar, these will add a dark rummy quality you won’t get from plain white. If you have a pump you can follow this as well. Otherwise create a whirlpool and let settle for 30 minutes.
